In the search for new ingredients that counteract some of problems associated with consumption meat and products like high contents saturated fat, salt, cholesterol, absence dietary fiber, presence synthetic additives, Hibiscus sabdariffa calyxes have shown good colorant, antimicrobial, antioxidant properties. This research paper studies use H. roselle directly or by means extracts in products. Although its application is incipient, results are promising. The vibrant red color makes suitable their even though concentration must be optimized since acid taste can detract from overall acceptance. antimicrobial properties contribute to safer products, effects, helping extend shelf life reducing oxidative processes.
